2 cups cooked chicken, shredded

1/2 cup Buffalo wing sauce

1/2 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup green onions, finely chopped

12 egg roll wrappers

1 egg, beaten (for sealing the wrappers)

Oil for frying (vegetable or canola)

Ranch or blue cheese dressing for dipping

Instructions
 

In a large mixing bowl, combine the shredded chicken with Buffalo wing sauce, mixing well to coat the chicken evenly.

    Add the softened cream cheese into the bowl and stir until fully incorporated.

      Fold in the shredded cheddar cheese and chopped green onions into the chicken mixture until well combined.

        Take one egg roll wrapper and lay it on a clean, flat surface with one corner pointing towards you.

          Spoon approximately 2 tablespoons of the chicken mixture onto the center of the wrapper.

            Dip your finger into the beaten egg and brush the edges of the wrapper.

              Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the top corner with the egg wash.

                Repeat the process with the remaining wrappers and filling until all are assembled.

                  In a large skillet or deep fryer, heat oil over medium heat until hot (about 350°F or 175°C).

                    Carefully fry the egg rolls in batches for about 4-5 minutes, turning occasionally, until golden brown and crispy.

                      Remove the cooked egg rolls and drain them on paper towels to absorb excess oil.
