Ingredients

2 cups cooked shredded chicken

1 cup buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup ranch dressing

8 flour tortillas (8-inch)

1 cup blue cheese crumbles (optional)

1/2 cup green onions, chopped (for garnish)

Cooking spray or oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or oil.

Mix Chicken Filling: In a large mixing bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, 1/2 cup of the cheddar cheese, and ranch dressing. Mix until everything is well incorporated and creamy.

Prepare Tortillas: Warm the flour tortillas in the microwave for about 30 seconds to make them pliable.

Assemble Enchiladas: Place a generous scoop of the buffalo chicken mixture (about 1/4 cup) in the center of each tortilla. Sprinkle some blue cheese crumbles if you like. Roll the tortilla tightly, placing the seam side down into the prepared baking dish.

Top and Bake: Once all tortillas are rolled and placed in the dish, pour any remaining buffalo sauce over the top and sprinkle the remaining 1/2 cup of cheddar cheese.

Bake the Enchiladas: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the enchiladas are heated through and the cheese is bubbly and golden.

Garnish and Serve: Once out of the oven, let the enchiladas cool for a few minutes. Garnish with chopped green onions before serving.

                Prep Time: 15 min | Total Time: 50 min | Servings: 4-6

                  - Presentation Tips: Serve the enchiladas hot on a large platter, drizzling with extra ranch dressing and a sprinkle of green onions for added color and flavor.
