2 cups all-purpose flour

1 cup warm water (110°F)

1 tablespoon sugar

1 tablespoon active dry yeast

1 teaspoon salt

2 tablespoons olive oil (plus extra for drizzling)

1 cup cooked chicken, shredded

1/2 cup buffalo sauce

1 cup shredded mozzarella cheese

1/4 cup crumbled blue cheese (optional)

Fresh chives or parsley for garnish

Activate the Yeast: In a mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for about 5 minutes until frothy.

    Make the Dough: Add the flour, salt, and olive oil to the yeast mixture. Mix until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

      First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

        Prepare the Chicken: In a separate bowl, combine the shredded chicken with the buffalo sauce. Mix until the chicken is well coated.

          Shape the Focaccia: Preheat the oven to 425°F (220°C). Punch down the risen dough and transfer it to a greased baking sheet. Press the dough out into a rectangle, about 1/2 inch thick. Use your fingers to make dimples all over the surface.

            Top the Dough: Spread the buffalo chicken mixture evenly across the top of the focaccia. Sprinkle mozzarella cheese generously over the chicken. If using blue cheese, add it now. Drizzle a little olive oil on top.

              Second Rise: Allow the focaccia to rise for an additional 20-30 minutes while the oven heats.

                Bake: Bake the focaccia in the preheated oven for 20-25 minutes, until the edges are golden brown and the cheese is bubbly.
