4 medium-sized potatoes, diced into cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups cooked chicken, shredded (preferably rotisserie)

1/2 cup buffalo sauce (adjust based on spice preference)

1 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

1 green onion, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

      Roast Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, stirring halfway through for even cooking.

        Mix Chicken and Sauce: While the potatoes are roasting, combine the shredded chicken with buffalo sauce in a separate bowl. Add more sauce if you prefer a spicier flavor.

          Combine Ingredients: Once the potatoes are done, remove them from the oven. Layer the buffalo chicken mixture evenly over the roasted potatoes. Sprinkle the shredded cheddar cheese over the top.
