Ingredients

4 medium russet potatoes

1 cup cooked shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened

1/4 cup sour cream

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped (plus more for garnish)

Salt and pepper to taste

Olive oil for drizzling

Cooking spray or olive oil for greasing the muffin tin

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Potatoes: Scrub the russet potatoes clean, then pierce each potato with a fork several times. Place them on a baking sheet and bake for 45-60 minutes, or until tender.

Make the Chicken Mixture: In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, sour cream, shredded cheddar, and chopped green onions. Mix until well combined. Season with salt and pepper to taste.

Scoop and Smash: Once the potatoes are baked, let them cool slightly before handling. Cut each potato in half and scoop out a bit of the flesh, creating a hollow space. Place the scooped potato flesh in a bowl, and mix it with a drizzle of olive oil, salt, and pepper until smooth and creamy.

Assemble the Cups: Lightly grease a muffin tin with cooking spray or olive oil. Fill each potato half with the creamy potato mixture and top with the buffalo chicken mixture.

Bake the Cups: Place the filled potato halves back into the muffin tin and bake for an additional 15-20 minutes, or until the edges are golden and the top is bubbly.

Garnish and Serve: Remove from the oven, and let cool for a few minutes. Garnish with additional chopped green onions before serving.
