2 cups cooked brown rice

1 lb chicken breast, diced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, sliced

1 cup cherry tomatoes, halved

1 cup shredded lime cilantro yogurt (see note below)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a medium bowl, combine the diced chicken, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat the chicken evenly in the spices.

    Heat a large skillet over medium heat. Add the seasoned chicken to the skillet and cook for about 7-10 minutes, stirring occasionally, until browned and cooked through. Remove from heat and set aside.

      In medium-sized serving bowls, layer cooked brown rice at the bottom.

        Next, add in a portion of black beans and corn on top of the rice.

          Add the cooked chicken, followed by the diced red bell pepper and halved cherry tomatoes.

            Top each bowl with sliced avocado and a generous dollop of lime cilantro yogurt.

              Garnish with fresh chopped cilantro and serve with lime wedges on the side for an extra zesty flavor.

                  Note: To make shredded lime cilantro yogurt, mix 1 cup plain yogurt with the juice of 1 lime, and 2 tablespoons finely chopped cilantro. Add salt to taste.
