8 oz fettuccine or egg noodles

2 boneless, skinless chicken breasts

3 tablespoons unsalted butter

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried Italian herbs

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Noodles: In a large pot of salted boiling water, cook the noodles according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Chicken: While the noodles are cooking, season the chicken breasts with salt, pepper, and Italian herbs on both sides.

      Sear the Chicken: In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the chicken breasts and sear for about 5-6 minutes on each side, until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing.

        Make the Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer.

          Cream It Up: Reduce the heat to low and stir in the heavy cream. Add the red pepper flakes if using. Simmer for 2-3 minutes, stirring occasionally until the sauce thickens slightly.

            Combine: Add the cooked noodles to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

              Finish with Chicken and Cheese: Stir in the sliced chicken and grated Parmesan cheese. Season with salt and pepper to taste, gently mixing everything together until well combined.
