Cajun cuisine has its origins in the southern United States, notably in Louisiana, and is deeply rooted in the history and culture of the Acadian people. In the 18th century, French settlers known as Acadians were expelled from Canada and settled in the bayous of Louisiana. They brought with them their culinary traditions, which evolved over time due to the diverse influences of the region, including Spanish, African, and Native American flavors.

Ingredients

2 boneless, skinless chicken breasts

1 cup smoked sausage, sliced

2 cups fettuccine pasta

1 tablespoon olive oil

1 tablespoon Cajun seasoning

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup chicken broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken and Sausage: Sprinkle the Cajun seasoning evenly over both sides of the chicken breasts. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and sauté for 5-7 minutes on each side, until fully cooked and golden brown. Once cooked, remove the chicken from the skillet and set aside to rest.

Cook the Sausage: In the same skillet, add the sliced smoked sausage and cook until browned, about 3-4 minutes. Remove the sausage from the skillet and set aside with the chicken.

Cook the Pasta: In a pot of boiling salted water, cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Make the Sauce: In the skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and add the heavy cream. Stir until well combined and let the mixture simmer for about 3-4 minutes, allowing it to thicken slightly.

Combine Ingredients: Gradually stir in the grated Parmesan cheese until melted and smooth. Add cooked fettuccine, chicken, and sausage to the sauce, tossing gently until everything is well coated. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season: Taste and adjust seasoning with salt and pepper as needed.

Serve: Slice the chicken into strips and arrange on top of the pasta. Garnish with fresh parsley for a pop of color.

                Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 4

                  - Presentation Tips: Serve the pasta in a large shallow dish, topped with the sliced chicken and a sprinkle of extra Parmesan cheese. Add a sprig of parsley on top for a fresh touch and serve with crusty bread on the side.
