4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 celery stalks, diced

6 cups vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 tablespoon olive oil

Salt and pepper to taste

1 cup green onions, chopped (for garnish)

1 cup shredded cheddar cheese (optional, for topping)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables are softened and the onion is translucent.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, use a potato masher or an immersion blender to partially puree the soup for a creamy texture while still leaving some chunks of potatoes.

          Stir in the heavy cream and Cajun seasoning. Allow the soup to gently heat for another 5 minutes, stirring occasionally. Season with salt and pepper to taste.

            Serve the soup hot, topped with chopped green onions and shredded cheddar cheese if desired.
