Ingredients

2 salmon fillets (6 oz each)

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

1 cup cherry tomatoes, halved

Cooked rice or quinoa (for serving)

Instructions

Season the Seafood: Generously sprinkle the Cajun seasoning over both sides of the salmon fillets and shrimp. Make sure they're well-coated for the best flavor.

Heat the Skillet: In a large skillet over medium-high heat, add 2 tablespoons of butter. Allow it to melt and sizzle slightly.

Cook the Salmon: Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes, or until the skin is crispy and the salmon is cooked halfway through. Flip and cook for another 3-4 minutes until fully cooked. Remove from the skillet and keep warm.

Sauté the Shrimp: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cherry tomatoes. Sauté for 1-2 minutes until fragrant.

Add the Shrimp: Add the shrimp to the skillet and cook for about 3-4 minutes, or until pink and opaque. Stir occasionally.

Finish the Sauce: Drizzle lemon juice over the shrimp and tomatoes, stir to combine, and season with salt and pepper to taste.

Combine and Serve: Return the cooked salmon to the skillet to warm through for about 1 minute. Serve the salmon and shrimp over a bed of cooked rice or quinoa, spooning the garlic butter sauce over the top.
