1 pound shrimp, peeled and deveined

1 pound lump crab meat, checked for shells

1 cup bay scallops

1 cup diced celery

1 cup diced green bell pepper

1 cup diced onion

3 cloves garlic, minced

2 tablespoons Cajun seasoning

1 teaspoon dried thyme

1/4 cup all-purpose flour

2 cups seafood stock

1 cup half-and-half

1 tablespoon Worcestershire sauce

3 tablespoons unsalted butter

1 teaspoon hot sauce (or to taste)

Salt and pepper to taste

1 refrigerated pie crust (or homemade, if desired)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Sauté the Vegetables: In a large skillet, melt the butter over medium heat. Add the diced celery, green bell pepper, onion, and sauté for about 5 minutes until softened. Stir in the garlic and cook for an additional minute.

      Add Spices and Flour: Sprinkle the Cajun seasoning, dried thyme, salt, and pepper over the vegetable mixture. Stir to combine, then add the flour, cooking for another 2 minutes to ensure the flour is well combined with the vegetables.

        Make the Sauce: Gradually whisk in the seafood stock, then add the half-and-half and Worcestershire sauce. Cook, stirring frequently, until the mixture thickens (about 5-7 minutes).

          Incorporate Seafood: Once the sauce has thickened, gently fold in the shrimp, crab meat, and scallops. Add hot sauce to taste and mix everything until the seafood is evenly coated with the sauce. Remove from heat.

            Assemble the Pie: Roll out the pie crust into a 9-inch pie dish. Pour the seafood mixture into the crust. Cover with a second layer of pie crust or create a lattice top. Seal the edges and make small slits in the top crust for steam to escape.
