1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

1 cup ricotta cheese

½ cup powdered sugar (for frosting)

½ teaspoon cinnamon

Mini chocolate chips (for topping)

Zest of 1 orange (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar on medium speed until light and fluffy (about 3-4 minutes).

        Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until combined.

          Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

            Gently fold in the ricotta cheese and the orange zest (if using) into the batter until evenly incorporated.

              Divide the batter among the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

                While the cupcakes are cooling, prepare the frosting. In a medium bowl, mix the ricotta cheese and powdered sugar until smooth. Stir in cinnamon.

                  Once the cupcakes have cooled, pipe the ricotta frosting onto each cupcake using a pastry bag fitted with a star tip.

                    Sprinkle mini chocolate chips on top of the frosting for garnish.
