1 cup all-purpose flour

1/4 cup whole wheat flour

1/2 teaspoon salt

1/2 teaspoon sugar

1/2 cup unsalted butter, chilled and cubed

4-5 tablespoons ice water

2 medium tomatoes, thinly sliced

8 oz fresh mozzarella, sliced

1/4 cup fresh basil leaves

1 tablespoon balsamic glaze

Fresh ground black pepper to taste

Sea salt for sprinkling

Instructions
 

Make the Dough: In a large bowl, whisk together all-purpose flour, whole wheat flour, salt, and sugar. Add the cubed butter and mix with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

    Add Water: Gradually add the ice water, one tablespoon at a time, stirring until the dough begins to hold together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

      Preheat Oven: While the dough is chilling, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

        Assemble the Galette: On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer it to the prepared baking sheet.

          Layer Ingredients: Starting from the center of the galette, layer the tomato slices in a spiral pattern, leaving a 2-inch border around the edge. Next, add the mozzarella slices on top of the tomatoes, then sprinkle with fresh basil leaves.
