1 cup granulated sugar (for caramel)

1/4 cup water

1 cup whole milk

1/2 cup sweetened condensed milk

3 large eggs

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/3 cup unsalted butter, melted

Optional: whipped cream and fresh berries for serving

Instructions
 

Make the Caramel: In a small saucepan, combine 1 cup of granulated sugar and 1/4 cup of water. Heat over medium heat, stirring gently until the sugar dissolves. Allow it to boil without stirring until it turns a deep golden brown, about 5-7 minutes. Quickly pour the caramel into a muffin tin, filling each cup about 1/3 full. Let it cool and harden while you prepare the flan mixture.

    Prepare Flan Mixture: In a large mixing bowl, whisk together the whole milk, sweetened condensed milk, eggs, vanilla extract, and salt until well combined.

      Combine Dry Ingredients: In another bowl, mix the all-purpose flour and baking powder together.

        Blend Everything Together: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Finally, fold in the melted butter until smooth.

          Fill Muffin Tin: Pour the flan batter over the set caramel in each muffin cup, filling them about 2/3 of the way full.

            Bake: Preheat your oven to 350°F (175°C) and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

              Cool and Unmold: Allow the muffins to cool in the pan for 10 minutes before inverting them onto a serving plate. The caramel will flow down the sides for a beautiful presentation.
