2 pounds beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 bell peppers (red and green), chopped

2 medium tomatoes, diced

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon chili powder

2 cups beef broth

2 bay leaves

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

    Season the beef cubes with salt and pepper. Add them to the pot in batches, browning on all sides. Remove the beef and set it aside on a plate.

      In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes.

        Stir in the minced garlic and cook for another minute until fragrant.

          Add the chopped bell peppers and sauté for an additional 5 minutes until they begin to soften.

            Then, incorporate the diced tomatoes and tomato paste, mixing well to combine.

              Sprinkle in the ground cumin, smoked paprika, oregano, and chili powder, stirring well to coat the vegetables with the spices.

                Return the browned beef to the pot, and pour in the beef broth. Add the bay leaves.

                  Bring the mixture to a simmer. Once simmering, cover the pot, lower the heat, and let it braise for 2 to 2.5 hours, or until the beef is tender. Stir occasionally and check for liquid levels, adding more broth if necessary.

                    Once the beef is tender, remove the bay leaves and adjust the seasoning with salt and pepper to taste.

                      Serve hot, garnished with chopped fresh cilantro.
