1 medium head of cauliflower, grated or processed into rice-sized pieces

2 tablespoons sesame oil

1 cup mixed vegetables (carrots, peas, bell peppers, diced)

2 green onions, finely chopped

2 cloves garlic, minced

1 inch ginger, grated

2 large eggs, lightly beaten

3 tablespoons low-sodium soy sauce (or tamari for gluten-free)

Salt and pepper to taste

Optional: 1 tablespoon sriracha or chili paste for heat

Fresh cilantro for garnish

Prepare the Cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Alternatively, grate the cauliflower using a box grater.

    Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Then, add the mixed vegetables and cook for another 3-4 minutes until tender.

        Add Cauliflower Rice: Stir in the processed cauliflower rice and cook for 5-7 minutes, stirring frequently, until the cauliflower is tender but not mushy.

          Combine Everything: Return the scrambled eggs to the skillet. Pour in the soy sauce, and add salt, pepper, and optional sriracha. Toss everything together until well mixed and heated through.
