1 medium celeriac (celery root), peeled and diced

1 large onion, chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Optional garnish: toasted pumpkin seeds and a drizzle of chili oil

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Add the diced celeriac and potatoes to the pot, mixing well with the onions and garlic.

        Pour in the vegetable broth and add the thyme. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 25-30 minutes, or until the celeriac and potatoes are tender.

          Remove the pot from heat and carefully blend the soup with an immersion blender until smooth. (Alternatively, you can blend in batches using a countertop blender).

            Stir in the coconut milk, then reheat the soup gently on low for 5-10 minutes. Season with salt and pepper to taste.

              Serve the soup hot, and top each bowl with toasted pumpkin seeds and a delicate drizzle of chili oil for an extra kick.
