8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 tablespoon lemon juice

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon zest (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and sauté for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Carefully pour in the vegetable broth, scraping up any bits from the bottom of the pan. Allow it to simmer for 2-3 minutes.

        Combine: Reduce the heat to low and stir in the lemon juice and heavy cream. Let the mixture simmer for another 3-4 minutes until it thickens slightly.

          Add Cheese: Stir in the grated Parmesan cheese until melted and well combined. If the sauce is too thick, add a little reserved pasta water to your desired consistency.

            Final Mix: Add the cooked shrimp and drained fettuccine to the skillet. Toss everything together gently until the pasta is coated with the creamy sauce. Season with salt and black pepper to taste.

              Serve: Plate the pasta and garnish with chopped parsley and lemon zest for a fresh touch.
