1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

24 oz cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 tablespoon lemon juice

1 ½ cups fresh strawberries, sliced

1/4 cup powdered sugar (for strawberry topping)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust.

      Bake the Crust: Bake the crust in the preheated oven for about 10 minutes until golden. Remove and let it cool completely.

        Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract using an electric mixer until smooth and creamy.

          Add Eggs and More: Add in the eggs one at a time, mixing well after each addition. Then, blend in the sour cream and lemon juice until combined.

            Pour the Filling: Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

              Bake the Cheesecake: Bake in the oven for 55-60 minutes or until the center is set but still slightly jiggly.

                Cooling Time: Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour. This helps prevent cracking. Then refrigerate for at least 4 hours, preferably overnight, to fully set.

                  Prepare the Strawberry Topping: In a bowl, mix the sliced strawberries with powdered sugar, and let them sit for about 15 minutes to release their juices and create a syrup.
