1 pound ground beef

2 medium potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups beef broth

1 cup shredded sharp cheddar cheese

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Add the ground beef, cooking until it is browned. Break the meat into small pieces as it cooks. Drain excess fat if necessary.

      Stir in the diced potatoes, beef broth, thyme, paprika, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, stir in the heavy cream and shredded cheddar cheese. Mix well until the cheese has melted and the soup has thickened slightly, around 5 minutes.

          If desired, add the frozen peas and cook for an additional 2-3 minutes until heated through.

            Taste and adjust seasoning with additional salt and pepper if needed.

              Serve the soup hot, garnished with fresh parsley.
