4 cups fresh broccoli florets

1 cup uncooked quinoa

2 cups vegetable broth

1 cup shredded sharp cheddar cheese

1 cup cream cheese, softened

1/2 cup sour cream

1 cup grated parmesan cheese

1/2 cup breadcrumbs

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the broth is absorbed.

      Meanwhile, steam the broccoli florets until they are bright green and tender, about 4-5 minutes. Set aside.

        In a large mixing bowl, combine the cooked quinoa, steamed broccoli, shredded cheddar cheese, cream cheese, sour cream, garlic, onion powder, garlic powder, and season with salt and pepper. Mix until all ingredients are well combined.

          Transfer the mixture to a greased 9x13-inch casserole dish, spreading it out evenly.

            In a small bowl, mix the breadcrumbs with the grated parmesan cheese and olive oil until the breadcrumbs are coated. Sprinkle this mixture evenly over the casserole.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.

                Let the casserole cool for about 10 minutes before serving. Garnish with chopped fresh parsley.
