8 slices of thick-cut bread (sourdough or ciabatta works best)

1 cup cooked shrimp, peeled and deveined

1 cup shredded mozzarella cheese

1/2 cup cheddar cheese, shredded

4 tablespoons butter, softened

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

Optional: crushed red pepper flakes for added spice

Prepare the Garlic Butter: In a small bowl, mix softened butter, minced garlic, chopped parsley, Italian seasoning, salt, and pepper until well combined.

    Make the Filling: In a mixing bowl, combine the cooked shrimp, mozzarella cheese, cheddar cheese, and a pinch of salt and pepper. Mix until the shrimp are evenly coated with cheese.

      Assemble the Sandwich: Spread a generous layer of garlic butter on one side of two slices of bread. Place one slice of bread butter-side-down in a skillet over medium heat. Spoon the shrimp and cheese mixture on top, then place another slice of bread on top, butter-side-up.

        Grill the Sandwich: Cook for 3-4 minutes until the bread is golden and crispy. Carefully flip the sandwich using a spatula and grill the other side for another 3-4 minutes until melted and golden. If needed, lower the heat to ensure the cheese melts without burning the bread.

          Repeat for Remaining Sandwiches: Continue the same process for the remaining bread, shrimp, and cheese mixture. You can cook multiple sandwiches at the same time if your skillet allows.
