2 lbs (about 900g) baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

½ cup freshly grated Parmesan cheese

¼ cup chopped fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes, olive oil, garlic powder, paprika, dried rosemary, salt, and pepper. Toss until the potatoes are evenly coated.

      Spread the potatoes in a single layer on a large baking sheet, cut side down. This helps achieve a crispy bottom.

        Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden and fork-tender, turning them halfway through cooking for even roasting.

          Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese evenly over the hot potatoes, then add the grated Parmesan on top.

            Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Once out of the oven, let the potatoes cool for a minute, then garnish with freshly chopped parsley before serving.
