1 pound Italian sausage (sweet or spicy, removed from casings)

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, chopped

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

½ cup frozen peas (optional)

Fresh parsley, chopped for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for about 3-4 minutes until softened.

    Add the minced garlic and cook for an additional 1 minute until fragrant.

      Push the vegetables to the side of the skillet and add the Italian sausage. Cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes).

        Stir in the rice and mix well with the sausage and vegetables, cooking for another 1-2 minutes to toast the rice slightly.

          Pour in the chicken broth, and season with smoked paprika, dried oregano, salt, and pepper. Bring to a boil, then reduce heat to low.

            Cover the skillet and simmer for about 15-18 minutes, or until the rice is tender and has absorbed most of the liquid.

              If using, add the frozen peas during the last 5 minutes of cooking, replacing the lid quickly to steam them.

                Once the rice is cooked, remove from the heat and stir in the shredded cheddar cheese until melted and creamy.

                  Let it rest for a couple of minutes before serving.
