2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsalted butter, cold and diced

1 cup grated sharp cheddar cheese

1 cup cooked sausage, crumbled (Italian or breakfast sausage works well)

3/4 cup buttermilk (or regular milk with a splash of vinegar)

1 teaspoon garlic powder (optional)

1 tablespoon fresh chives, chopped (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and optional garlic powder. Whisk until well mixed.

      Add the cold, diced butter to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

        Stir in the grated cheddar cheese and crumbled sausage until evenly distributed.

          Create a well in the center of the mixture and pour in the buttermilk. Gently stir until just combined. Do not overmix; it’s okay if the dough is slightly sticky.

            Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat or roll it into a 1-inch thick rectangle.

              Using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather any scraps, re-pat, and cut more biscuits from them.

                If using, sprinkle chopped chives on top of each biscuit before baking for an added burst of flavor and color.

                  Bake in the preheated oven for 15-20 minutes, or until golden brown on top and cooked through.

                    Remove from the oven and let cool slightly before serving warm.
