1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or regular milk with a splash of vinegar)

1 large egg

1 cup shredded cheese (cheddar and mozzarella mix preferred)

1/4 cup finely chopped green onions

1/4 cup cooked and crumbled bacon (optional)

2 tablespoons olive oil (plus more for cooking)

Instructions
 

In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

    In a separate bowl, whisk together the buttermilk, egg, and olive oil until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing; a few lumps are fine.

        Fold in the shredded cheese, chopped green onions, and cooked bacon, if using.

          Heat a non-stick skillet or griddle over medium heat and add a tablespoon of olive oil.

            Once the oil is hot, pour 1/4 cup of the pancake batter onto the skillet for each pancake.

              Cook for about 2-3 minutes, until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes on the other side until golden and cooked through.

                Repeat with the remaining batter, adding oil to the skillet as needed.
