Ingredients

2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded pepper jack cheese

1 cup shredded mozzarella cheese

1 can (10 oz) green enchilada sauce

1 can (4 oz) diced green chiles

8 small flour tortillas

1 teaspoon garlic powder

1 teaspoon onion powder

¼ teaspoon cumin

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the shredded chicken, cream cheese, sour cream, half of the pepper jack cheese, half of the mozzarella cheese, green enchilada sauce, diced green chiles, garlic powder, onion powder, cumin, salt, and black pepper. Mix well until everything is thoroughly combined and creamy.

Lay out each flour tortilla on a flat surface. Spoon about ¼ cup of the chicken mixture into the center of each tortilla.

Roll each tortilla tightly, starting from one end, and place seam-side down in a greased 9x13-inch baking dish.

Once all the tortillas are rolled and placed in the dish, pour any remaining enchilada sauce evenly over the top. Sprinkle the rest of the pepper jack and mozzarella cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro before serving.
