Cherry Cheesecake Egg Rolls

Ingredients
  

1 cup cherry pie filling

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 tsp almond extract

10 egg roll wrappers

1 cup vegetable oil (for frying)

1/4 cup graham cracker crumbs

Whipped cream (for serving, optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and almond extract. Beat with a hand mixer until smooth and creamy. Set aside.

    Take one egg roll wrapper and place it on a clean surface with one corner facing you (like a diamond).

      Spoon about 1-2 tablespoons of the cream cheese mixture onto the center of the wrapper.

        Add approximately 1 tablespoon of cherry pie filling on top of the cream cheese.

          Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll tightly toward the top corner, sealing the edge with a bit of water.

            Repeat the process with the remaining wrappers and filling mixture.

              Heat vegetable oil in a deep frying pan over medium-high heat.

                Once the oil is hot, carefully add 2-3 egg rolls at a time, frying for 2-3 minutes on each side or until golden brown and crispy.

                  Remove from the oil and drain on paper towels.

                    While still warm, sprinkle the egg rolls lightly with graham cracker crumbs to mimic a cheesecake crust.

                      Serve warm, optionally accompanied by whipped cream for dipping.
