Chicken and Broccoli Alfredo Roll-Ups

2 large cooked chicken breasts, shredded

2 cups steamed broccoli florets, chopped

1 cup ricotta cheese

1 cup Alfredo sauce (store-bought or homemade)

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 large flour tortillas

1 1/2 cups shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine the shredded chicken, chopped broccoli, ricotta cheese, 1/2 cup of Alfredo sauce, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.

      Lay a tortilla flat on a work surface. Spoon about 1/2 cup of the chicken and broccoli mixture onto the center of the tortilla.

        Roll the tortilla tightly, securing the filling inside. Place the roll-up seam side down in a greased baking dish. Repeat with the remaining tortillas and filling.

          Once all the roll-ups are in the dish, pour the remaining Alfredo sauce over the top, spreading it evenly.

            Sprinkle the shredded mozzarella cheese on top of the Alfredo sauce.

              Cover the dish with aluminum foil and bake for 20 minutes.

                Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                  Let the roll-ups cool for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color.
