1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

6 cups chicken broth

2 cups cooked chicken, shredded

1 package (16 oz) potato gnocchi

2 cups fresh spinach

1 cup heavy cream

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

    Stir in the minced garlic, diced carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.

      Add the dried thyme and oregano, stirring until fragrant, about 1 minute.
