1 lb boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

6 cups chicken broth

1 cup uncooked jasmine rice

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt and pepper. Sauté for 5-7 minutes until the chicken is cooked through and lightly browned. Remove the chicken from the pot and set aside.

    In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes until the vegetables have softened. Stir in the minced garlic and cook for another minute until fragrant.

      Pour in the chicken broth and bring to a gentle boil. Add the uncooked jasmine rice and return the cooked chicken to the pot.

        Reduce the heat to a simmer and cook for about 15 minutes, or until the rice is tender.

          Stir in the lemon juice, lemon zest, and thyme. Adjust seasoning with salt and pepper as needed.

            Remove from heat and let the soup sit for a few minutes to allow the flavors to meld.

              Serve the soup hot, garnished with fresh parsley.
