6 hot dogs

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon sugar

1 teaspoon salt

1/2 teaspoon cayenne pepper

1 cup milk

1 large egg

1/2 cup shredded cheddar cheese

1 cup chili (canned or homemade)

Vegetable oil for frying

Prepare the Hot Dogs: Skewer each hot dog with a wooden stick, making sure to leave enough stick at the bottom for easy handling. Pat them dry with paper towels.

    Make the Batter: In a large mixing bowl, whisk together the cornmeal, flour, baking powder, sugar, salt, and cayenne pepper until well blended. In a separate bowl, combine the milk and egg. Gradually pour the wet ingredients into the dry mix, stirring until just combined. Fold in the shredded cheddar cheese.

      Heat the Oil: In a deep frying pan or pot, pour enough vegetable oil to submerge the corn dogs (about 3 inches deep). Heat the oil to 350°F (175°C).
