Ingredients

400g udon noodles

3 tablespoons chili oil

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated ginger

2 green onions, chopped

1 carrot, julienned

1 bell pepper (any color), sliced

150g bok choy, chopped

Sesame seeds for garnish

Fresh cilantro for garnish

Salt and pepper to taste

Instructions

Cook the Udon Noodles: In a large pot of boiling salted water, cook the udon noodles according to package instructions until tender. Drain and rinse under cold water to stop cooking. Set aside.

Heat the Oil: In a large skillet or wok, heat 3 tablespoons of chili oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant, about 1 minute.

Sauté the Vegetables: Add the carrot, bell pepper, and bok choy to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are tender but still crisp.

Combine Flavors: Add the cooked udon noodles to the skillet. Drizzle with soy sauce and sesame oil. Toss everything together to ensure the noodles are well coated and heated through. Adjust seasoning with salt and pepper as needed.

Garnish and Serve: Remove from heat, and add chopped green onions. Toss gently to combine. Plate the noodles and garnish with sesame seeds and fresh cilantro for an added flavor boost.

            Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 4

              - Presentation Tips: Serve in deep bowls for a cozy feel, and drizzle a bit more chili oil over the top before serving for a vibrant look. Add lime wedges on the side for an extra zesty kick!
