2 cups cheddar cheese, shredded

1 cup cream cheese, softened

1 cup diced tomatoes with green chilies (canned)

1 cup black beans, drained and rinsed

1 cup cooked chorizo or ground beef (optional)

1/2 cup milk

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 4-5 minutes.

    Add the minced garlic and cook for another minute until fragrant.

      Reduce the heat to low and stir in the cream cheese, mixing until it begins to melt.

        Gradually add the milk, whisking constantly until the cream cheese is fully incorporated, creating a smooth sauce.

          Mix in the shredded cheddar cheese until melted and fully combined.

            Stir in the diced tomatoes with green chilies, black beans, and cooked chorizo (if using).

              Season the mixture with smoked paprika, cumin, salt, and pepper. Keep stirring until everything is thoroughly heated through, about 5-7 minutes.

                Remove from heat and transfer the dip to a serving bowl.

                  Garnish with chopped fresh cilantro for a burst of color and flavor.
