1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup all-purpose flour

1 teaspoon baking powder

2 eggs, beaten

3 tablespoons vegetable oil (for frying)

1/2 cup chicken broth

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1 tablespoon soy sauce (low sodium)

2 tablespoons honey

1 teaspoon grated ginger

1 clove garlic, minced

1/4 teaspoon red pepper flakes (optional for spice)

2 green onions, finely chopped (for garnish)

Sesame seeds (for garnish, optional)

Instructions
 

Prepare the Chicken: In a bowl, mix the cornstarch, all-purpose flour, and baking powder together. Dip each piece of chicken first into the egg, then coat thoroughly with the flour mixture.

    Fry the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. In batches, add the chicken pieces to the hot oil and fry for about 5-7 minutes until golden and crispy. Remove the cooked chicken from the pan and drain on paper towels.

      Make the Lemon Sauce: In the same skillet, lower the heat to medium. Add the chicken broth, lemon zest, lemon juice, soy sauce, honey, grated ginger, minced garlic, and red pepper flakes (if using), stirring to combine. Bring to a gentle simmer and let cook for about 3-4 minutes, or until slightly thickened.

        Combine and Coat: Add the fried chicken back into the skillet with the lemon sauce. Toss well to coat all the pieces evenly and heat through for an additional 2-3 minutes.

          Garnish and Serve: Remove the skillet from heat. Transfer the lemon chicken to a serving plate and garnish with chopped green onions and sesame seeds if desired.
