8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (or vegetable oil)

Prepare the Cheesecake Filling: In a mixing bowl, add the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy. Set aside.

    Prep the Strawberries: Take each strawberry and, using a small paring knife, carefully hollow out a small part at the top. Make sure not to cut too deep; you want to maintain the shape of the strawberry.

      Fill the Strawberries: Use a piping bag or a small spoon to fill each hollowed strawberry with the cheesecake filling. Set the filled strawberries aside on a parchment-lined tray.
