Ingredients

200g dark chocolate (minimum 70% cocoa), chopped

3 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy cream

A pinch of salt

Fresh raspberries or strawberries for garnish

Mint leaves for garnish

Instructions

Melt the Chocolate: In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler) or in the microwave in 20-second intervals, stirring until smooth. Set aside to cool slightly.

Whisk Egg Yolks: In a separate bowl, whisk the egg yolks with the sugar and vanilla extract until light and creamy. This should take about 2-3 minutes.

Combine Mixtures: Gradually stir the melted chocolate into the egg yolk mixture, mixing until well combined.

Prepare the Egg Whites: In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

Fold in Egg Whites: Gently fold the whipped egg whites into the chocolate mixture with a spatula, being careful not to deflate the mixture.

Whip the Cream: In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the chocolate mixture until no streaks remain.

Fill the Cups: Spoon the mousse into heart-shaped cups or ramekins until filled.

Chill: Refrigerate the cups for at least 2 hours, or until set.

Serve: Before serving, garnish each cup with fresh raspberries or strawberries and a sprig of mint for added color and flavor.

Prep Time: 20 minutes | Total Time: 2 hours 20 minutes | Servings: 4 cups

                      - Presentation Tips: Serve the mousse cups on a decorative plate and dust with cocoa powder or powdered sugar for an elegant touch. You can even add edible gold leaf for that extra luxurious feel!
