Prepare the Crust: In a mixing bowl, combine chocolate cookie crumbs and melted butter until evenly coated. Press this mixture firmly into the bottom and up the sides of a 9-inch pie pan. Chill the crust in the refrigerator while preparing the filling.
Make the Peanut Butter Filling: In a large mixing bowl, mix the softened cream cheese and peanut butter together until smooth. Gradually add the powdered sugar and continue to mix until fully combined and fluffy.
Incorporate Whipped Cream: Gently fold the whipped cream into the peanut butter mixture until fully incorporated, being careful not to deflate the whipped cream.
Fill the Crust: Pour the peanut butter filling into the chilled cookie crust, spreading it evenly. Smooth the top with a spatula.
Prepare the Chocolate Topping: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth.
Top the Pie: Pour the melted chocolate over the peanut butter filling, spreading it evenly with a spatula to cover the surface completely.
Chill the Pie: Refrigerate the pie for at least 4 hours or until set, or overnight for best results.
Serve: Once set, slice the pie into wedges. Garnish with chopped peanuts and chocolate shavings, if desired.
