1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup granulated sugar

½ cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

½ cup buttermilk (or ½ cup milk + 1 teaspoon lemon juice, let sit for 5 minutes)

½ cup granulated sugar (for coating)

2 tablespoons ground cinnamon (for coating)

Optional: ½ cup mini chocolate chips (for added richness)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or line with paper liners.

    In a medium bowl, mix together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      In a large mixing bowl, cream together the softened butter and ½ cup granulated sugar until light and fluffy using an electric mixer on medium speed (about 3-4 minutes).

        Add the egg and vanilla extract, mixing until fully incorporated.

          Gradually add the dry flour mixture to the wet ingredients, alternating with buttermilk. Start and finish with the dry ingredients, mixing until just combined. If using, fold in the mini chocolate chips.

            Using a spoon or ice cream scoop, divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                While the muffins are baking, prepare the cinnamon sugar coating by combining ½ cup granulated sugar and 2 tablespoons ground cinnamon in a shallow bowl.

                  Once the muffins are done baking, let them cool in the tin for 5 minutes before transferring them to a wire rack. While they’re still warm, roll each muffin in the cinnamon sugar coating until fully covered.

                    Allow the muffins to cool slightly before serving, or enjoy them warm.
