4 large potatoes, peeled and diced

1 medium onion, finely chopped

2 carrots, sliced

2 celery stalks, chopped

4 cups vegetable broth

1 bay leaf

1 teaspoon dried thyme

½ cup heavy cream (or coconut cream for a dairy-free option)

2 tablespoons butter (or olive oil)

Salt and pepper to taste

Fresh dill or parsley, for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 4-5 minutes.

    Add the sliced carrots and chopped celery to the pot. Continue to cook for another 5 minutes until the vegetables soften slightly.

      Stir in the diced potatoes, vegetable broth, bay leaf, and dried thyme. Bring to a boil, then reduce the heat to a simmer.

        Cover and let the soup simmer for about 20-25 minutes, or until the potatoes are fork-tender.

          Once the potatoes are soft, remove the bay leaf. If you prefer a creamier texture, use an immersion blender to puree half of the soup while leaving the other half chunky. Alternatively, you can ladle out half the soup, blend it in a blender, and then return it to the pot.

            Stir in the heavy cream (or coconut cream) and season with salt and pepper. Heat through for an additional 5 minutes.

              Serve the soup hot, garnished with fresh dill or parsley.
