4 large Yukon Gold potatoes, peeled and diced

1 cup kale, finely chopped

1 cup green cabbage, shredded

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup whole milk or plant-based milk

3 tablespoons butter or vegan butter

Salt and pepper to taste

1 teaspoon nutmeg

1 tablespoon olive oil

Chopped green onions for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 3-4 minutes.

    Add the minced garlic and cook for an additional 1 minute until fragrant.

      Stir in the diced Yukon Gold potatoes, shredded green cabbage, and chopped kale. Mix well.

        Pour in the vegetable broth, ensuring all the vegetables are submerged. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.

            After blending, return the soup to the pot. Stir in the whole milk (or plant-based milk) and butter. Mix until the butter is melted and the soup is creamy.

              Season the soup with salt, pepper, and nutmeg. Taste and adjust seasoning if needed.

                Serve hot, garnished with chopped green onions for an extra touch.
