Ingredients

1 medium head of green cabbage, chopped

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 cup uncooked rice (preferably brown or jasmine)

2 cups beef broth

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese (or more to taste)

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon. Drain any excess fat.

Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-5 minutes.

Stir in the chopped cabbage and cook for an additional 5 minutes, until slightly tender.

Mix in the diced tomatoes (with their juice), uncooked rice, beef broth, smoked paprika, oregano, salt, and pepper. Bring the mixture to a gentle simmer, allowing the flavors to meld for about 5 minutes.

Transfer the beef and cabbage mixture into a large casserole dish. Cover the dish with aluminum foil.

Bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil, sprinkle the shredded cheddar cheese on top, and bake for another 15-20 minutes, until the cheese is melted and bubbly.

Once done, remove from the oven and let sit for 5-10 minutes before serving.

Garnish with chopped fresh parsley if desired, and serve warm.
