1 cup long-grain white rice

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon salt

Zest of 1 lime

2 tablespoons fresh lime juice

1/4 cup fresh cilantro, chopped

Freshly ground black pepper to taste

Rinse the rice under cold water until the water runs clear, then drain well. This helps remove excess starch and produces fluffier rice.

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add the rinsed rice to the saucepan and stir for 1-2 minutes, allowing the rice to lightly toast in the oil and garlic.

        Carefully pour in the vegetable broth and add the salt. Bring the mixture to a boil.

          Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-18 minutes, or until the rice is tender and all the liquid is absorbed.
