2 cups cooked corned beef, diced

2 medium potatoes, peeled and diced

1 large onion, finely chopped

1 green bell pepper, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon black pepper

½ teaspoon salt (or to taste)

2 tablespoons olive oil

2 tablespoons fresh parsley, chopped (for garnish)

4 eggs (optional, to serve on top)

Instructions
 

Prepare the Potatoes: In a large pot, add the diced potatoes and cover them with cold water. Bring to a boil and cook for about 5-7 minutes until just tender but not fully cooked. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and green bell pepper. Sauté for 3-4 minutes until they begin to soften.

      Add Garlic and Spices: Stir in the minced garlic, smoked paprika, black pepper, and salt. Cook for another minute to fragrant the garlic.
