4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 large onion, sliced

3 cloves garlic, minced

2 medium carrots, sliced

1 red bell pepper, chopped

1 cup chicken broth

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup green beans, trimmed

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add the sliced onion and garlic, cooking until the onion is translucent, about 3-4 minutes.

      Add the sliced carrots and chopped red bell pepper, stirring occasionally for another 4 minutes until they begin to soften.

        Pour in the chicken broth and stir in the Dijon mustard, dried thyme, smoked paprika, salt, and pepper. Bring to a gentle simmer.

          Return the chicken thighs to the skillet, skin-side up, and spoon some of the vegetables over them. Cover and let cook for about 20 minutes on low heat.

            In the last 5 minutes of cooking, add the green beans, cover, and continue to cook until the chicken reaches an internal temperature of 165°F (75°C) and the beans are tender.

              Once done, remove from heat and let rest for a few minutes. Garnish with fresh parsley before serving.
