1 lb flank steak

Salt and pepper to taste

1 tablespoon olive oil

4 mini slider buns

1 cup arugula or baby spinach

1 large avocado, sliced

1 cup cherry tomatoes, halved

For Cowboy Butter:

½ cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

½ teaspoon cayenne pepper (adjust for spiciness)

Juice of ½ lemon

Prepare Cowboy Butter: In a medium bowl, mix the softened butter with minced garlic, parsley, chives, smoked paprika, Worcestershire sauce, cayenne pepper, and lemon juice until well combined. Set aside in the refrigerator to firm up slightly.

    Cook the Steak: Preheat a grill or skillet over medium-high heat. Season the flank steak generously with salt and pepper. Add the olive oil to the pan or grill grate. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.

      Assemble the Sliders: Slice each slider bun in half. Spread a generous amount of cowboy butter on each half of the buns. Place a few slices of flank steak on the bottom halves of the buns, followed by arugula, avocado slices, and a few cherry tomato halves.

        Finish and Serve: Top with the other half of the buns. Optionally, you can grill the assembled sliders briefly to melt the cowboy butter and toast the buns slightly.
