1 pound fresh crab meat, picked over for shells

1 cup crushed crackers (like saltines or panko)

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1/2 teaspoon Old Bay seasoning

1/4 teaspoon cayenne pepper

2 green onions, chopped

1 egg, beaten

10-12 egg roll wrappers

Vegetable oil, for frying

In a large mixing bowl, combine the crab meat, crushed crackers, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, cayenne pepper, chopped green onions, and beaten egg. Mix gently until just combined—be careful not to break up the crab too much.

    Lay an egg roll wrapper on a clean, flat surface, with one corner pointing towards you. Spoon about 2-3 tablespoons of the crab mixture onto the wrapper, slightly below the center.

      Fold the bottom corner over the filling, then fold in the sides tightly, and roll it away from you to seal. Use a little water on the edge of the wrapper to help seal it completely. Repeat with the remaining wrappers and filling.

        In a deep frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).

          Carefully add a few egg rolls at a time to the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

            Serve warm with a dipping sauce like sweet chili sauce or soy sauce for an extra kick.
