4 boneless, skinless chicken breasts

1 cup fresh cranberries

1 orange, zested and juiced

1/4 cup honey

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup chopped green onions (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine the orange juice, orange zest, honey, soy sauce, garlic powder, ginger powder, and a pinch of salt and pepper. Whisk until well blended.

      In a skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for about 3-4 minutes on each side until they are golden brown.

        Once the chicken is seared, transfer it to a baking dish. Scatter the fresh cranberries evenly over the chicken.

          Pour the orange sauce mixture over the chicken and cranberries, making sure to coat everything well.

            Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

              Remove the foil and bake for an additional 10 minutes to caramelize the cranberries and thicken the sauce slightly.

                Once cooked, remove from the oven and let the chicken rest for a few minutes before slicing.

                  Serve the chicken garnished with chopped green onions and additional cranberries if desired.
