Ingredients

4 large yellow onions, thinly sliced

3 tablespoons unsalted butter

1 tablespoon olive oil

4 cups vegetable broth

1 cup heavy cream

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon honey (optional, for added sweetness)

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions

In a large pot, melt the butter and olive oil together over medium heat.

Add the sliced onions to the pot and sauté gently, stirring frequently for about 15-20 minutes, or until the onions are soft and translucent but not browned.

If you want a bit of sweetness in your soup, stir in the honey, and cook for another 2 minutes.

Pour in the vegetable broth and add the thyme. Bring the mixture to a gentle simmer.

Cook for an additional 20 minutes, allowing the flavors to meld together.

Using an immersion blender or a regular blender (in batches if necessary), blend the soup until smooth and creamy.

Return the soup to the pot over low heat, stir in the heavy cream, and season with salt and pepper to taste.

Heat through for about 5 minutes, ensuring it doesn’t boil.

Serve hot, garnished with chopped fresh chives for added flavor and color.

                    Prep Time: 15 minutes | Total Time: 60 minutes | Servings: 4-6

                      - Presentation Tips: Ladle the soup into beautiful bowls, and consider drizzling a little extra cream on top and a sprinkle of cracked pepper for an elegant touch. A slice of crusty bread beside the bowl makes for a delightful pairing!
