2 salmon fillets

1 cup mushrooms, sliced (cremini or button)

3 cloves garlic, minced

1 cup heavy cream

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (for added brightness)

Instructions
 

In a large skillet, heat olive oil and butter over medium heat until melted and hot.

    Add the sliced mushrooms to the skillet and sauté for about 5 minutes until they are golden and have released their moisture.

      Stir in minced garlic and dried thyme, cooking for an additional 1-2 minutes until the garlic is fragrant.

        Pour in the heavy cream, stirring well to combine. Allow the mixture to simmer gently for 3-4 minutes, thickening slightly.

          Season the sauce with salt, pepper, and lemon zest to taste.

            Push the mushrooms to the side of the skillet and place the salmon fillets skin-side down in the skillet. Spoon some sauce over the top of each fillet.

              Cover the skillet with a lid and let the salmon cook for about 6-8 minutes, or until it flakes easily with a fork.

                Once done, gently remove the skillet from heat, and plate the salmon with a generous serving of the creamy garlic mushroom sauce spooned over the top.

                  Garnish with freshly chopped parsley for a pop of color.
